The minions enjoy helping H (3) mixing and O (8) weighing and measuring and chief spoon licker.
I made this recipe several times last year for our Macmillan coffee fund raiser and it went down well. You could swap the dark chocolate decoration for white chocolate or milk chocolate whichever you prefer.
200g butter, softened plus a bit extra for greasing
200g golden caster sugar
3 large eggs, beaten
200g self raising flour
2tsp vanilla extract
3 tbsps milk
30g cocoa powder, sifted
1 1/2 tbsp strong coffee, cooled
50g dark chocolate, melted
Heat oven to 180C/gas 4
Grease and line a 2lb loaf tin with a strip of baking paper
In a large bowl beat together the butter, pinch of salt and the sugar until light and fluffy
Add eggs a little at a time beating well.
Sift over and fold in flour along with vanilla extract, and milk.
Transfer half the mixture into another bowl, stir in the cocoa powder and coffee into one of the bowls.
Dollop spoonfuls of both mixtures alternating between the two.
Once all the mixture has been used up bang the tin on the worktop to remove any air bubbles.
Use handle of metal spoon to swirl and marble the mixtures together.
Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean.
Cover with foil if after 40 minutes the cake is becoming too brown.
Leave it to coo for 20 minutes then put on wire rack to cool completely. Once cooled drizzle melted chocolate over the surface and leave to set before slicing.
